Title: Beef and Bean Pie with Guacamole

Yield: 5 Servings

200gPacket cheese-flavoured corn chips
1/2c(35g) stale breadcrumbs
3/4c(90g) grated tasty cheese
1/4c(20g) grated parmesan cheese
2 Eggs, lightly beaten
2tbChopped fresh coriander
1c(125g) grated tasty cheese, extra
  Paprika
1/2c(125ml) sour cream
FILLING
1tbVegetable oil
1md(150g) onion, sliced
1 Clove garlic, crushed
2tsGround cumin
1tsSambal oelek
500gMinced beef
425gCan tomatoes
1sm(150g) red pepper, chopped
1/4c(60ml) tomato paste
310gCan red kidney beans, rinsed drained
2tbChopped fresh coriander
GUACAMOLE
2md(500g) avocados
3 Green shallots, chopped
2tsLemon juice

Grease a 25cm pie dish. Process corn chips until finely crushed. Combine crushed chips with breadcrumbs, cheeses, eggs and coriander. Press mixture evenly over base and side of prepared dish. Bake in moderately hot oven about 10 mins or until lightly browned; cool.

Spoon filling into pastry case; top with extra cheese, sprinkle with paprika. Bake in moderate oven about 20 mins or until cheese is melted and pie is hot. Top with guacamole and sour cream. Sprinkle pie with chopped shallots, if desired.

Filling: Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft. Add spices and mince, cook, stirring, until mixture is well browned. Add undrained crushed tomatoes, and remaining ingredients, simmer, uncovered, until mixture is thickened.

Guacamole: Mash avocados with a fork, stir in remaining ingredients.
